Vermeer: One of Amsterdam’s Finest Gourmet Restaurants
DutchAmsterdam.nl — Michelin-starred Restaurant Vermeer is one of Amsterdam’s finest gourmet restaurants.
In reviews its dishes are frequently described by diners as ‘superb.’ The restaurant has earned many international accolades.
British head chef Christopher Naylor focuses on seasonal, local food.
How local? Naylor has his own vegetable garden on the roof of the building. He and his fellow chefs harvest the fresh vegetables and herbs needed for the menu of the day on a daily basis.
Naylor’s roof garden even features edible flowers, Jerusalem artichoke and espalier fruit.
Produce and meat is also sourced from regional farms around Amsterdam.
Painter Johannes Vermeer Would Have Felt Right At Home
Vermeer is located within the NH Collection Amsterdam Barbizon Palace hotel. NH Collection is the “upper-upscale brand” of NH Hotel Group. “Gastronomy plays a prominent role in the NH Collection experience,” the Vermeer website proclaims.
The hotel is located in the oldest part of town, just across from Amsterdam Central Station. It consists of nineteen 17th-century houses and a 15th-century chapel. In fact, some of the rooms still feature the 17th-century oak beams and high ceilings.
Restaurant Vermeer itself is situated in four of the monumental buildings. Each buidling has a luxurious 17th century Dutch decor, complete with beamed ceilings, brass chandeliers, and marble-tiled floors.
Painter Johannes Vermeer — himself born and raised in an inn — would likely have felt right at home. [Mind you, nowadays Vermeer is found at the Rijksmuseum]

Expect a multi-course, chef’s choice selection of locally sourced food, prepared to the highest standards.
Chef Naylor “does not like overworked and pretentious bullshit in food.”
“We use techniques from the classical French kitchen,” Naylor says. “We have our own interpretation of these dishes and techniques … We work with modern techniques, but not too much. The dish has to speak for itself.”
